Replacing Your Water Filter

For side-by-side refrigerators with filter access in the base grille, follow these instructions for replacing your filter:

1. Push the eject button, then pull the filter cap. Do not twist cap.
2. Remove the filter cap by turning it counter clockwise. Set aside cap. Discard old filter.
3. Remove the packaging and O-ring covers from the new filter.
4. Align arrows on the cap and new filter. Turn clockwise to snap in place.
5. Push filter into the base grill until the eject button pops. Gently tug on cap to ensure it is snug.
6. Flush the water system until a total of 3 gallons (12 L) has been dispensed.

In this video, Betty demonstrates a tribute to all mothers: her Lemon Sunshine Mother's Day Cake recipe. It is a simple cake to make, but is dramatic and impressive. Mothers (and Dads) will like it! Ingredients: 1 pkg. white cake mix (2) 3 oz pkgs. lemon Jello 2 cups boiling water 16 oz. container Cool Whip (Regular works best here.) Prepare the white cake mix as directed on the package. Bake the cake in 2 well-greased and floured 9-inch cake pans at 350 degrees for 25 to 30 minutes, or until done. (Cake is done when a toothpick inserted in the center comes out clean.) Cool in pans for 15 minutes. Poke the cake layers with a fork at 1/2-inch intervals. Do not remove from cake pans. Dissolve the two packages of Jello separately, each in 1 cup of boiling water. Pour each portion of Jello liquid over a single layer. Chill the two layer cakes in their pans for 4 hours. Unmold one layer, and place it on a cake plate. Top with approximately 1 cup of Cool Whip. Spread it out evenly. Unmold the second layer, and place it on top of the first. Frost the sides and the top with Cool Whip. Garnish the frosted cake with lemon slices, arranged in a pretty way on the top of the cake. I wish all of you a Happy Mother's Day! --Betty :)

There is just something so refreshing to the palate when you finish off your meal with a luscious lemon dessert. This article offers you two wonderful lemon cake recipes to choose from. Both are delicious but they couldn't be more different. One is a delicate chiffon and one is a pudding cake. Which ever you choose, it is sure to be a hit.

LEMON PUDDING CAKE
2 tbsp butter
1/2 cup sugar
2 eggs, separated
3 tbsp flour
1 3/4 cup milk
1/4 cup lemon juice
3 tsp grated lemon peel
powdered sugar for garnish

Preheat oven to 350 degrees.

In a large mixer bowl, beat butter and sugar until well blended. Beat in the egg yolks until blended. Using low speed, blend in the flour. Add the milk, lemon juice, and lemon peel.

In a separate bowl, beat the egg whites until soft peaks form when the beaters are raised. Soft peaks will curl on the ends. Using a rubber spatula, fold the egg whites into the lemon mixture. Turn the batter out into an 8 12-inch baking dish. Set the dish in a larger pan and pour boiling water 1-inch deep in the pan.

Bake at 350 degrees for 40 to 45 minutes or until golden brown and knife inserted in center comes out clean. Remove from oven and let stand at least 15 to 20 minutes before serving. Before serving, garnish by sprinkling top with powdered sugar.

Yield: 6 servings

LEMON POPPY SEED CHIFFON CAKE
1/2 cup poppy seed
1/4 cup water
Soften the poppy seed in the water for at least one hour.

1 pkg lemon chiffon cake mix
1 tsp grated lemon zest
1 pkg (4-oz) lemon pie and pudding mix
1/2 cup whipping cream

Prepare the cake mix according to package direction and stir in the poppy seeds. Pour batter into 2 9-inch ungreased loaf pans and bake according to the package directions. Allow to cool in pans for a couple of minutes the remove from pans to wire rack to cool completely.

Prepare the pie filling mix according to the package direction but reducing water by 1/2 cup. Stir in the lemon zest. Cool, if using the cooked filling.

Cut one loaf of the cake horizontally into three layers. Use other cake for another use, freeze for later use, or double the lemon zest, use two packages of pie filling mix, and 1 cup of whipped cream to make two cakes.

Whip the whipping cream until soft peaks form then fold into the lemon pie filling. Spread filling over the top of each layer and stack layers to make a 3 layer loaf cake. Chill cake to set filling before serving.

In this video, Betty demonstrates how to make a Perfect Lemon Pound Cake. This cake was inspired by the trip Rick and I made to Jonathan's at Gratz Park in Lexington, Kentucky, when I ordered Lemon Pound Cake for dessert. This is a delicious version of lemon pound cake, made of butter, sugar, eggs, flour, lemon juice, and lemon extract. It is baked in a tube cake pan, although you may bake it in individual servings—the way it was served at Jonathan's. Ingredients: 1 ½ cups butter, softened to room temperature 3 cups sugar 8 eggs 3 cups all-purpose flour 1 ½ tablespoons lemon juice 1 ½ tablespoons lemon extract In a large mixing bowl, cream 1 ½ cups butter and 3 cups sugar together. Beat with an electric mixer until light and fluffy. Add 8 eggs, one at a time, beating well after each addition. Add 3 cups flour, a little at a time, mixing well until all of the flour is incorporated and smooth. Stir in 1 ½ tablespoons lemon juice and 1 ½ tablespoons lemon extract. Pour batter into a greased and floured tube cake pan. Bake at 350 degrees for 1 hour and 15 minutes, or until a wooden pick inserted into the deepest part of the cake comes out clean. Cool in pan 15 to 20 minutes. Remove from pan, place on a cake stand and let cool completely. I served my Perfect Lemon Pound Cake with Blueberry Sauce and Cranberry-Blueberry Sorbet, with a couple of thin lemon slices and a sprig of mint on the side. My family loved this dessert!
